I love lemon bars. But, making them from scratch can be kind of a pain in the neck! It’s a few different steps to make classic lemon bars.

This Lemon Bars Recipe is super simple. Just mix the bottom layer using cake mix. Pour the gooey cream cheese mixture on top. Then bake. Done.

I found a recipe for Paula Deen’s Original Gooey Butter Cake. Paula Deen certainly knows her stuff. This is an amazing dessert that gets rave reviews.

But I like to have a bit more that just a sweet dessert. I Need Flavor!

That is how these lemon bars came about. I took that fabulous Gooey Butter Cake Recipe and added a little ZING!

Easy Cake Mix Lemon Bars

  1. 1 (15.25oz) Box Vanilla Cake Mix*
  2. 1/2 Cup Butter – melted
  3. 1 Large Egg
  4. Zest of 1 Large Lemon
Topping Layer
  1. 8 ounces Cream Cheese – softened
  2. 2 Large Eggs
  3. 2½ Cups Powdered Sugar
  4. 1/4 Cup Fresh Squeezed Lemon Juice
  5. Zest of 1 Large Lemon


  1. Preheat oven to 350°
  2. Mix crust ingredients into a thick dough consistency.
  3. Line an 8×8 inch baking dish with foil and spray with nonstick.
  4. Press the crust evenly into the bottom of prepared baking dish.
  5. Use a hand mixer to combine topping layer ingredients (except lemon zest) until fully incorporated. Stir in lemon zest.
  6. Pour mixture over crust.
  7. Bake for 40 minutes. The center will still be gooey.
  8. Allow to cool completely.
  9. Once cooled, remove foil from baking dish and transfer to flat surface.
  10. Carefully peel foil from bars.
  11. Cut bars and dust with powdered sugar.
  1. *Yellow or White Cake will work.
  2. Add more lemon zest for extreme lemon flavor.
