Gluten Free Chex Scotcheroos

Gluten Free Chex Scotcheroos


  • 3 cups rice or corn Chex
  • 1/2 cup light corn syrup
  • 1/2 cup sugar
  • 3/4 cup peanut butter, divided
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips, see note
  • 1/2 teaspoon vanilla extract


  1. Line an 8 x 8 inch baking pan with foil, leaving an overhang on two sides for easy removal.

  2. Place cereal into a large bowl. In a small saucepan over medium-high heat, combine syrup and sugar and stir until it begins to boil. Remove from the heat and stir in 1/2 cup of the peanut butter until smooth, then immediately pour over the cereal. Toss until all of the cereal is coated with the peanut butter mixture. Pour into the prepared pan and smooth into a level layer.

  3. In a microwave safe bowl, place the chocolate chips, butterscotch chips, and the remaining peanut butter. Microwave in 30-second intervals two or three times until mixture can be stirred smooth. Stir in the vanilla and pour over the bars, smoothing with a spatula into an even layer. Cool completely at room temperature.

  4. Use the foil overhangs to lift the bars from the pan. Cut into small squares and serve. You can also store these bars at cool room temperature.


Check the butterscotch chips to be sure the brand is completely gluten free and does not include any gluten products such as barley.
